Camp oven cookie-cake

I can’t decide if this recipe is a cake or a cookie. My intention was to make cookies in the camp oven, or rather one large cookie that we could cut into pieces, but the result was very moist in the middle and more like a cake. My first attempt was also way too thick to be called a cookie so second time around I halved the ingredients and ended up with a slightly crisper, but still soft in the middle cookie-cake.

Ingredients

  • 1 cup self-raising flour
  • A pinch of salt
  • 1/3 cup of unsalted butter or margarine
  • 1/3 cup of brown sugar
  • 1/4 cup of granulated sugar
  • 2 eggs
  • 2 tspns vanilla extract
  • 1 200g packed of choc bits (I used white chocolate)

Method

  • Combine the flour and salt in a bowl and set aside.
  • In a small saucepan melt the butter and stir in both the sugars until they dissolve
  • Remove from the heat and whisk in the egg and vanilla
  • Pour into dry ingredients and combine into soft sticky dough
  • Mix in choc bits
  • Pour into foil tray and place in pre-heated camp oven
  • It won’t take long to cook, depending on the temperature of your camp oven, start checking after about 10 mins

Camp fire cooking tips

  • I use foil trays inside my camp oven because I hate cleaning camp ovens, you can cook directly in the cast iron if you prefer.
  • Using a trivet in the bottom of your camp oven, under the foil tray, will help stop the bottom of your cookie from burning.
  • Preheating the camp oven makes a huge difference to your cooking time.
  • Keep the camp oven a little away from the full force of the fire and load coals onto the lid to give a more even heat.
