Chicken and Pumpkin Curry
One pot wonder
Serves 2 | 10 mins prep | 25 mins cooking
I based this recipe on one I found in a new camp cooking book Andrew got for Christmas. I have modified it slightly to suit our camp cooking facilities. I am a fan of anything that can be cooked in one pot and this simple curry is as easy as it is delicious.
Ingredients
- Olive Oil
- 1 brown onion
- 2 table spoons madras curry paste
- 400grams chicken thighs cut into cubes
- A small wedge of pumpkin
- A small can of coconut milk
- 1 packet of microwave rice
Method
- Heat oil in pan and cook onion until soft, add curry paste and cook until fragrant, add chicken and cook until brown.
- Add pumpkin, coconut milk and rice to pan and bring to boil then simmer for 10mins or until pumpkin is soft.
