Chicken and Pumpkin Curry

One pot wonder

I based this recipe on one I found in a new camp cooking book Andrew got for Christmas. I have modified it slightly to suit our camp cooking facilities. I am a fan of anything that can be cooked in one pot and this simple curry is as easy as it is delicious.

Ingredients

  • Olive Oil
  • 1 brown onion
  • 2 table spoons madras curry paste
  • 400grams chicken thighs cut into cubes
  • A small wedge of pumpkin
  • A small can of coconut milk
  • 1 packet of microwave rice

Method

  • Heat oil in pan and cook onion until soft, add curry paste and cook until fragrant, add chicken and cook until brown.
  • Add pumpkin, coconut milk and rice to pan and bring to boil then simmer for 10mins or until pumpkin is soft.
