Garlic and Feta Prawns
Quick and easy one pot prawns

My favourite camp cooking is one pot meals. Even though I am not usually the one doing the washing up it makes me happy to use as few dishes as I can and make life easier for everyone.
Ingredients
- 1kg large uncooked prawns, peeled (I like to take the tails off, so I don’t have to navigate them while eating, but that’s up to you)
- 2 tablespoon olive oil
- 2 medium brown onions, diced
- 3 tablespoons of crushed garlic
- 1/2 cup dry white wine
- 1 tub (140g) of tomato paste
- 1 can (400g) crushed tomatoes
- 2 tablespoon dried mixed herbs
- 1 microwave pouch rice (450g)
- 125 gram fetta crumbled
Method
Heat the oil and cook the onion and garlic, stirring until the onions are soft.
Add wine and tomato paste, bring to the boil.
Add the undrained tomatoes and simmer, uncovered for about 5 minutes, or until thickened, stirring occasionally.
Stir in the prawns and mixed herbs, simmer uncovered until the prawns are just cooked through.
Divide the mixture to individual bowls and sprinkle the top with feta.
